A study presented by researchers of the University of Vienna during the annual conference of American Chemical Society found that a substance found in dark roasted coffee could remove the gastric irritation and acid reflux caused by coffee. After testing the effects of different varieties of coffee on the cells of the human stomach , identifying the chemicals that irritate him as caffeine, catechols and ` -5- N - alkanoly hydroxytryptamides , scholars have noted also a component of dark roasted coffee , the `N - methylpyridium can hinder the production of hydrochloric acid and to reduce or eliminate the stomach irritation.
